BBQ Chicken Pizza
One night, I was craving BBQ Chicken Pizza, and luck would have it that I had all the ingredients I believed to be on the one I’d ordered at a beloved restaurant. It took me a few times to measure the proper ratios and determine the best crust or BBQ sauce on this pizza. I’m confident that this version is the winner. What I love about this pizza is that it’s fast and doesn’t require me to have a stand mixer and wait around for homemade dough to rise. This is made with a thin, store-bought crust, and once your veggies are chopped and your chicken is cooked, it comes together relatively fast. If you do not have the time to cook chicken, you can substitute it with 1 cup of rotisserie chicken.
Note on the Crust: The crust comes in a two-pack; this recipe is for one crust, but if you want to make two pizzas, double all the ingredients below and divide them among the two crusts.
The Goods:
1 Crust: Target’s Good and Gather Brand: Organic Ultra-Thin Crust or any other Whole Wheat Thin Crust you can find
3/4 Cup of Target’s Good and Gather Brand: Organic Honey BBQ Sauce
1 Cup of Mixed Yellow and Red Bell Peppers Sliced
1/2 Cup of Sliced Red Onion
1 cup of Diced Cooked Chicken Breast OR 1 Cup of Rotisserie Chicken
Only if Cooking Chicken: 1/4 TSP of each: onion powder, garlic powder, cumin, chill powder, sea salt, and black pepper
1/4 Cup Cilantro
1 Cup of Shredded Cheddar Cheese
1 Cup of Shredded Mozzarella Cheese
Step 1: Preheat your oven to 400 degrees. If using a pizza stone, be sure to preheat it. For example, my pizza stone must preheat 400 degrees for 15 minutes. The pizza's cooking temperature will remain at 400 degrees regardless of whether you use a pizza stone or pan.
Step 2: Heat 1 TBSP of olive oil in a pan over medium heat. Add the diced chicken breast into the pan and top with 1/4 TSP of each: onion powder, garlic powder, cumin, chill powder, sea salt, and black pepper. Once done, remove from the pan and set aside for now. If you are doing rotisserie chicken instead, skip this step and get 1 cup of chicken aside from your rotisserie chicken.
Step 3: Slice your bell peppers; I like doing 1/2 cup yellow bell pepper and 1/2 cup red bell pepper. After you have done that, slice your 1/2 cup of red onion. Heat 1 TBSP of olive oil over medium heat, add veggies to the pan, cook until softened, then set aside.
Step 4: Set your pizza stone/pan on a heatproof surface and put your crust on top to assemble your pizza.
Step 5: Spread 3/4 cup of honey BBQ sauce, then add the 1 cup of chicken, followed by 1 cup of sliced peppers and 1/2 cup of sliced red onion. Top those with 1/4 cup of cilantro leaves.
Step 6: Mix 1 cup mozzarella and 1 cup cheddar cheese in a bowl, then sprinkle on your pizza.
Step 7: Put your pizza in the oven on the center rack for 20 minutes, and then, if you need more of a firmer crust, place it on the bottom rack for another 5 minutes. Once it’s cooked to your liking, bring it out to cool down to slice and serve!
