Bruschetta
When I ask my family or friends what I can bring to the next gathering, the initial response is, “You HAVE to bring the bruschetta. Everyone loves bruschetta.” Out of all the things I have made at gatherings, I get asked for this recipe most, which I find oddly surprising because the ingredients seem so apparent. I feel confident that assembling this appetizer for your next get-together will be a breeze, and your loved ones will be raving about it!
The Goods:
2 Loaves of French Baguettes
2 Logs of Belgioioso Presliced Mozzarella Cheese
1 1/2 Cups of Diced Cherry Tomatoes
1 Stick of Softened Butter or 1/2 Cup of Olive Oil
Balsamic Glaze for Drizzling
1 Bunch of Fresh Basil Sliced in Ribbons

Note for Basil:
To slice in ribbons, pick off any long stems, pile the basil leaves on top of each other, and roll them up like a tortilla. Slice them horizontally to make ribbons.
Step 1: Line two large baking sheets with aluminum foil and turn the oven to broil.
Step 2: Slice the baguette into 1/2-inch slices and spread butter or brush oil on each side. Place them spaced apart on both baking sheets and bake them.
Step 3: Let one side of the slices cook for about 2 minutes, then flip them all to the other side to toast until golden. You DO NOT want them to get crusty and too firm, so they are easier to eat. When they cool down, they harden up, so take them out right when they get golden.
Step 4: Take the slices out of the oven and top each with a slice of mozzarella cheese. If you need to make the cheese go further due to bigger baguettes, tear the cheese apart and make smaller pieces. Put a few diced tomatoes on top of the mozzarella.
Step 5: Put the bread with the toppings back into the oven and let the cheese melt, but do not let it brown or bubble up. Right when you see the initial melt, grab them out.
Step 6: Top each slice of bread with the fresh basil ribbons and drizzle each with the balsamic glaze.
Step 7: Serve on a pretty dish and enjoy!
