Turkey “Spanish Rice”

When I came up with this recipe, I didn't have all the traditional ingredients to make Spanish Rice, so I took what I had on hand and crossed my fingers that I could create something close to the flavor and, at the same time, make it a healthier version that I could feel good about putting in my body.

The Goods:

  • 1 Pound of 90% Lean Ground Turkey

  • 1/2 of a Yellow Bell Pepper Diced

  • 1/2 or a Red Bell Pepper Diced

  • 1/2 Cup Red Onion

  • 1 Package of Chipotle Tomato Banza Rice

  • 1/4 Cup Fresh Cilantro + More for Garnish

  • 1/2 Cup Shredded Mexican Cheese

  • 1/4 Cup Chicken Broth

  • 2 TBSP Olive Oil Divided

Spice Mix:

  • 1/2 tsp Cumin

  • 1/4 tsp Oregano

  • 1/4 tsp Garlic Powder

  • 1/4 tsp Onion Powder

  • 1/4 tsp Ground Pepper

  • 1/2 TBSP Chilli Powder

Optional Toppings:

  • Plain Greek Yogurt ( I like Fage 0%) in place of sour cream

  • Sliced Avocado

  • Hot Sauce

  • Salsa

Step 1: Heat 1 TBSP olive oil over medium-high heat. Add ground turkey and break it up. Mix all spices and add to the turkey. Cook until turkey is browned and set aside.

Step 2: Return a clean pan over medium heat, add the remaining 1 TBSP of olive oil, and add all diced veggies. Cook the veggies untouched for 8 minutes; you should get a nice char on them that way.

Step 3: While you wait for the veggies to cook, cook the banza rice according to the package instructions. Once done, set aside.

Step 4: Add the turkey, rice, and 1/4 cup chicken broth to the pan with the veggies. Bring it to a simmer, slowly sprinkle, and mix in 1/2 cup cheese.

Step 5: Once everything is well combined, turn down the heat. Mix in the 1/4 cup of fresh cilantro.

Step 6: Serve immediately and garnish with extra cilantro for a pretty plate if you wish! Top with any of the optional toppings above.
